# Roasted Butternut Squash

# Ingredients

  • 1 medium butternut squash (~3 lbs)
  • 2 tbsp olive oil
  • 2 tsp paprika (smoked paprika, if available)
  • ¾ tsp salt
  • ½ tsp ground turmeric
  • ½ tsp garlic powder

# Instructions

  1. Preheat oven to 375°.
  2. Peel the squash, slice it in two, and remove the seeds. Dice the squash flesh into ~½ inch cubes.
  3. Mix all ingredients together until the squash chunks are well coated.
  4. Spread the chunks out on a baking pan, and roast for 35 minutes, until the squash is tender.
  5. Serve warm.
