Roasted Butternut Squash

Ingredients
- 1 medium butternut squash (~3 lbs)
- 2 tbsp olive oil
- 2 tsp paprika (smoked paprika, if available)
- ¾ tsp salt
- ½ tsp ground turmeric
- ½ tsp garlic powder

Instructions
- Preheat oven to 375°.
- Peel the squash, slice it in two, and remove the seeds. Dice the squash flesh into ~½ inch cubes.
- Mix all ingredients together until the squash chunks are well coated.
- Spread the chunks out on a baking pan, and roast for 35 minutes, until the squash is tender.
- Serve warm.
