Coronado Cookies

Ingredients
- ½ cup butter, softened
- ½ cup smooth peanut butter
- ½ cup white granulated sugar
- ½ cup firmly packed light brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- ½ tsp baking soda
- ½ tsp salt
- 1 cup semisweet chocolate chips
- 1 cup rice krispies cereal
- ½ cup old-fashioned rolled oats
- ½ cup yellow raisins

Instructions
- Cream the butter, peanut butter, and sugars until fluffy and smooth, about 4 to 6 minutes.
- Add the egg and vanilla and continue beating until smooth.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Reduce mixer speed to low and gradually incorporate the dry flour mixture.
- Fold in the chocolate, rice krispies, oats, and yellow raisins. Do not overmix.
- Use a 1 tbsp scoop to drop the dough 2 in apart on a lined baking sheet.
- Bake at 375° for 8 to 10 minutes, or until the edges have lightly browned but the tops are still very blonde.
